you are almost there brighteyes,
what you need to do is create 3 seperate symbols, one of the front, one of the side and one for the top,
once you have you 3 symbols, go into the 3d filter, of illustrator, and. Insode the filter you can select which symbol you want to map to which side, it is a little confusing as what side is what so it make take a few tries.

Thanks Salvadore - finally all sorted !!
At least I have learned how to do it. Just a shame I have about 200 of these to do in the next 30 days.
