1. Open the pattern file.
2. Edit > Define Pattern.
3. Open the logo file.
4. Select just the area you want to have the pattern.

Are you sure you're using the Polygonal Lasso tool? That sounds like the Pen tool set to Shape Layers and a foreground color of white.

In Hue/Saturation? Use the Lightness slider. You must have a selection only around the parts you want pure white or pure black.

Otherwise, try Image > Adjustments > Threshold.

Ctrl+D (Cmd+D on the Mac) will deselect. Also, make sure you have the "New selection" icon clicked on the Options Bar (the bar below the menu bar).
