I just recently started shooting Raw photos. When I am saving this photo as a jpg the color and quality are both changing. The image is in RGB mode which I thought was normal. Any help would be much appreciated.

When you are saving the jpeg , is the "Embed Color Profile: " Checked!? if not then every time it is opened the color could changed based on what profile is assigned. also as far as quality, jpegs are VERY compressed so you will always loose quality when saving as jpg however you could save as tif and keep much if not all of your quality.

Jpeg compression exploits the eye being less sensitive to fine color details than to fine brightness details.

Thank you guys for the responses but I haven't found the problem..
I defiantly realize that jpg is a compressed format, but until recently working with these raw files I haven't had a problem (i've been using PS for 9 years)

When I go to save them as a jpg they are changing so dramatically that I know something is wrong or I'm doing something wrong.

thanks scharpe.. I'm using PS CS2 and when I go to save the jpeg I do not have an option for "Embed Color Profile".
