I would like to give HDR a good go. I have tried in a few times before and the results have always been terrible! I shoot raw files on a 5Dmk11. Can I use ONE image & create different exposure level jpgs from that one then process the HDR in either photoshop or DPP itself? I do not want to pay for any new software. It would be either an architectural interior or exterior or a wedding, but maybe any type of picture really.

You can but it is not true HDR and it just makes your job harder. A single raw file will get you a lot further range wise than a jpeg so you have that in your favor.

There is a ebook called 'Top 10 HDR Mistakes and How to Fix Them' by Trey Ratcliff (not free) which is meant to be pretty good if your serious about this.

Usually bad results are caused by overcooking the range. 99% of the time the best HDR looks the most natural.

Standard HDR shots are +2EV, 0EV, -2EV so that's what what you need to create when adjusting the single raw file.
