If you click the maximise button on an image you can change that background grey by shift clicking the paint bucket on the blank area (it fills in the foreground colour, so pick that first) a word of warning, it might not be a great idea to use a colour other than black, white, or grey as it might put you off with colour correcting images. for a windows machine:
right-click on your desktop and go to properties
select the appearance tab
click advanced
from the item: dropdown choose application background
and then decide what colour you want it

Just select the brush or whatever tool you wish to use, select a color from the swatch or the color palette, then press and hold the ctrl key to change the background color when you are right clicking on the color you wish to select, or 2 click on the background color and choose a color. if you are useing the brush tool, make sure you change the background color to the foreground color by pressing the "x" key. To get back to black and white press the "d" key for default.
