Is it okay to use the "desaturate" command to make a black and white image or do I have to edit each individual piece of content before hand as a grayscale image to make it black and white? I've been able to make a b&w with that channel mixer, but for some reason, this doesn't seem to always work.

Quite often not.

Take for example this image, just grabbed it at random from my hard drive; left "desaturated", right "channel mixer".
The one on the left looks flat and dull.

But the "channel mixer" is not the only alternative way to convert to B&W, check Google, there are several of them.

You could save it as a jpeg, or a png or something, and then open it up in photoshop, and then desaturate it, but i suppose that wouldnt work , if you plan to edit it after it had been desaturated

I think channel mixer is the way to go but sometimes I like to use the default b/w gradient map..
