can someone tell me why i cant change the text color to anything other than black? probably simple...

parhpas your image mode is in index colour or something silly like that.

Have you tried picking the color first then choosing the text tool?
If you have the text already typed, make sure the text tool in chosen then highlight the text then click the "set the text color". pick a color, then ok.
