Well, the first thing you need to do is select the part you want to keep color and move it onto a different layer. (Different methods of selecting are the various lasso tools and the magic wand tool. Then just hit Ctrl+X and Ctrl+V so it's on a different layer) Then, select the other layer, that you want to be black and white, and hit Ctrl+U to adjust Color, click on the unselected box in the lower right hand corner (can't remember name) and then drag the saturation bar all the way to the left. This should do it. Let me know if you need additional help. |

Another way is
Duplictae layer
Desaturate layer(Shift Ctrl U)
Use the Eraser tool to erase the grey image and reveal the coloured one underneath

And yet one more option is to make a selection of what you want to desaturate, and add an Adjustment Layer. De-sat by choosing Color/Saturation type layer, and dropping the Saturation to nil.
So many choices, so few years! |

Or use a Channel Mixer Adjustment layer (monochrome setting in Channel Mixer allows you to mix RGB channels to get various BW tonal values). Paint with black on its layer mask to show the original color.
This method is non-destructive and you get the greatest control over color-based grayscale tonality. |
