I would like to be able to only select only the stuff that is on a layer. Say for instance I write some text. How do I select only the text? That way I can use other tools but only effect a specific area.

Marquee tools work fine for many purposes. However, if you want to make a precise selection of just the opaque areas of the layer, hold control while clicking the desired layer on the Layers palette. This will generate a selection based on the opacity of the layer.
Alternatively, you could click the "Lock Transparent Pixels" checkbox on the layers palette. This won't generate a selection; indeed, you won't see anything happen at all. But try applying a filter or using the airbrush tool--you'll see that only opaque areas are affected.
HOWEVER: if you're trying to do something to text, make sure it's rasterized first. (Go Layer>Rasterize>Type, if you didn't know. This will make it so you can't rewrite the text; it's no longer editable. But you will be able to make changes like filtering, re-coloring, brushing, etc.)

Easy way:
Look in your layers pallette, and find the layer you want, for example, if you wanted to select some text, as you said, select the layer with the text on, and hold down the ctrl key and click on the layer, so ctrl +click on the layer you want and it will select everything in that layer

Couldn't the original poster also create their initial text as a selection if they wanted to mess with the letter properties also?

No; once you finish typing your text in that mode, Photoshop generates a standard selection that cannot be edited like text. It becomes nothing more than your everyday, run-of-the-mill selection. This method works fine for what flash gordon wants to do, but like all the other methods described, it doesn't allow you to edit what you wrote, only what it looks like.

That I understand, and for future editting, it wouldn't be prudent to do the "create as selection" technique, unless they wanted to modify certain elements of the text, or individual lettering, if I am not mistaken.
