Hi all, new here.

Is there a way to copy the style of one piece of text and paste it onto another piece of text ala Illustrator/Freehand/Word?

For example, I have two headlines, one that's 26pt blue Frutiger with a tight tracking, the second headline is 12pt black helvetica. Can I copy just the 'style' from the Frutiger headline and paste it onto the second helvetica headline?

You can't do it the exact same way. But if you link the text layers and hold down the Shift key while entering info in the Character palette, all text will be changed to whatever is entered in the palette.
