On photoshop 6, I select what ever I want to remain color (like just the flowers), then copy it. Go to Image>Mode>grayscale. Then go to Image>Mode>RGB (or CMYK, what ever you are working in). Then paste. Done. This way, it keeps the original colors, and when you hit paste, it appears in the same place your selection was.
Like swanseamale47 said, there is a few differernt ways to do this, so it's whatever method you like best.
