I would like to learn how to do photography templates and composties for senior photography.. does anyone know of good books or can tell me how to do it

It depends on what you mean by a template, I''m guessing your refering to the layout with several images on one sheet? you should be able to find these around on the net free, or they are easy to make your own.

Just make a new image A4 300dpi and using the rulers (CTRL+R) drag lines off the rulers as guides then with the rectangular marquee drag out squares the sizes you want, then fill them with a different colour to your background.
Then to add the photos copy the first image you want to put in, select the magic wand tool (tick contigus) and click in the square you want to put the image in and edit/paste into that will put the image in the box, select the move tool, tick the show bounding box and holding down shift drag the corners untill its sized and positioned, then double click it. just do the same with the other images.
