how can i take the color out of a image?

There are loads of different ways to do this if you have photoshop? For safety I'd advise using a duplicate image for these, as it's a lot harder to put the colour back in (image/duplicate and work on that) the easiest is image/ajustments/desaturate
A better way is to open the channels palette and click them one at a time and see if theres one you like, if there is leave it selected and go to image/mode greyscale you will get a box asking if you want to discard other channels just click yes, then go to image/mode rgb to turn it back to RGB mode (otherwise you cant save as a JPEG)
My personal favorite is to go to image/ajustment/channel mixer, click the mono box and ajust the sliders to suit (try and keep the total to 100% or things start getting weird)

I do it this way.....

Go to Image>Mode>lab color. Click on your channels pallette and select the lightness channel. Go to Image>Mode>grayscale. Now it's black and white, but you can still go to Image>Mode>RGB or CMYK then add color to a certain area or match your printer mode. From here, I adjust my levels and contrast to get a desired black and white look.

But, like sadrobot said, there are about a billmillzillion different ways to do this. The way I posted works well because I use an RGB printer, and I can take an image of (for example) a child holding a rose, change the image to black and white, then back to RGB and color the rose, or the hair or cheeks or lips or all of the above back to the normal color. Instead of coloring, I could just copy and paste the rose etc. from the color image over to the black and white image and it would maintain it's color.

thanks guys. now i started a new image and want to add some color to a symbol i made. but it is set to greyscale so when ever i select a color to paint with it just switches to a shade of grey. how can i put it into color i can paint it?

go to image/mode/rgb you cant add colour to a greyscal image, once it's rgb you can add colour. My method would be to add a new layer, set the blend mode to colour and brush your colour on that. Wayne
