If I include a gray card in a photograph shot in RAW and using either CR3 or CR4, is there a method by which the photo can be adjusted quickly by somehow using the gray card in the picture?

Create a levels (or curves) adjustment layer, select the gray point eye dropper (middle one) and click on your gray card.

Yep - then open a picture taken without the card in it and hit 'Control-Alt-L' to apply the corrected Levels adjustment to that one.
