Hi everyone...I have searched and searched, but I just can't find what I'm looking for, and I'm sure it's because I don't know what the name of it is....Anyway, I have a color image of my wife, and I'd like to make all of it black and white, except for maybe the eyes or lips. I've seen this type of image plenty of times, but just don't don't know what it's called or how to do it. I apologize for such a basic question, but any help would be appreciated. Thanks!

The quickest way is to go image/ajustments/desaturate, then use the history brush to paint the colour back into the bits you want coloured, there are other ways. If you want to change the colours desaturate your image, then add a new layer and paint on the colour you want, then set the layer blend mode to colour or muiltiply (try both and see which looks best on your image)
These are sometimes called "popping colour" or "pop colour"

Yes mate, it was for rememberence day here in the UK, thats actually at the top of Pen-Y-Fan the highest peak in south Wales, it's been used by the Army and SAS for years as a training ground, sadly several chaps have died there in bad weather, so the cross is put there to remember them.

P.S. I should add the poppy is a symbol of rememberence here in the UK
