Selective Converting to Black and White

I am looking to flush my light light black and my light black lines in my epson 7880 so rather than just print one color I was thinking I could convert photos to black and white and only use that color. (Does that make sense and is it possible?) or will the printer attempt to use the other cartridges for gradients rather than less and more of the desired color?

Would one choose black and white in CS3 from the layers menu and then an option comes and I can choose with the eyedropper any color. In this case I am choosing the fill color already selected from the 8 color purge chart.
