I am working with My Cuisine from Elegant themes. To enlarge the size of the Menu page thumbnails you have to edit their psd files. I downloaded the psd file to photoshop and I see where you can edit the style of the images but I don't see where or how you can change the actual size of the images. In the theme the images have a white border around them, if you manage to enlarge the image any other way the border stays the same small size and that is why you have to change the psd file apparently.
