I am designing a logo, lets say, its "LOGO". I have an image "sky", I want to be able to cut out the letters "LOGO" from the image "sky" so that the fill inside each letter is of the image "sky".

Does that make sense??? Hope so.

Does anyone know what that technique is called and if they can recommend any ways or links that would teach me how to do it.

I'm using PS CS4

Welcome to the forums spiritedaway. There are a few ways to do what you want with varying degrees of usefulness, here's one Type Mask

the other way is using the magic wand tool and selecting each of the letters. Shift+Control+I to invert the selection and then hit delete.
