I'm thinking about taking courses to become an ACA but I'm wondering how long does the certification last. And why does it even expire at all. Let's say I become certified in Photoshop CS5, which I can put on a resume, if I don't find a job by the time my certificate expires, I'll be stuck out of luck. So I'm wondering if its really worth it.

You should just put it on the resume either way :) Teaching/Training jobs usually ask for adobe certified. Obviously other jobs will focus more on work you can do/have done.

You should get the expiry information from Adobe Support.
