I have a version of Photoshop CS2.

Whenever I go and create a horizontal line text box, and I type in text, I can't write more than a line. I press enter (on the normal side of my keyboard), the text-box still remains, but nothing I type after that is visible.

I had this same problem. Click on the Character pallete and make sure the Leading is set to Auto. Then the Enter key will take you to a new line.
