I was working at a res. of 300 and when i scaled it to full size (res. of 72) the text prints out pixelated? Its not to bad from 2 feet away but when your up within a foot you can see the square pixels. However on the screen the text looks crisp until you zoom in 200%. How can i fix this?

Hi there
72 is far too low for printing. Try using a resolution of 300 or above for more photo-realistic and smoother results!

okay how can i set the resolution to 300 without changing the document size. For example my project is 80 inch x 27 inch, when i set the resolution to 300 in the image size dialog box it shrinks my doc. size to 19.2 x 6.48. I will need it to print 80x27, any tips anyone?

Basically you need more pixels.
What kind of project are you working on? If you're printing live editable text then you should be able to upsample the image without degradation, on the other hand if you're working with any kind of pixel-based content then you'll lose quality no matter what.
It's a tricky subject, the only way to deal effectively with it is to start your projects at the correct dimensions, so the document size should be the size you want to print with the resolution set to 300PPI.

If it is only the text that is not 300 dpi, you can create the text in another document and then drag the layer over to your current project.
