I have seen several people with pictures that have the entire image in grayscale but they have one color or one object in the picture that remains in color. How do you do this?

Hello,
- Pull down "Layer > New Adjustment Layer > Hue/Saturation" > "OK" > in the "Hue/Saturation" dialog, desaturate the image by setting saturation to "-100".

"Hues" is the simplest but not the best tool for the purpose. If you are not happy with the result use more advanced method - "Channel Mixer" (as shown on the screenshot) or "Black & White" (if you're CS3).

Now you have to re-colorize some spot by removing the desaturation effect:

- Activate the Brush Tool, choose black foreground color, and paint on the adjustment layer's mask. (Painting on layer mask means, painting over document while layer mask is active)
