Hi there,
could you tell me the best way to achieve brighter more vibrant blue skys and greener plants? I'd like to add as much emphasis on holiday pics as poss without making them look fake

Using levels and curves for the most part can correct photos. If you are in PS CS2 you can also try
Image >> Adjustments >> Shadow/Hilight. |
