I've seen some photos where the entire thing is greyscale except for one item (which is colored)..can anyone help please..hopefully this makes sense |

There are many ways to do it and if you search this site you'll find a lot of info on them..but the easiest by far is to imply set a black brush to color mode and paint everything you want to appear BW.
or
open color image, desaturate it, then paint back the color with the history brush.
