I've seen some photos where the entire thing is greyscale except for one item (which is colored)..can anyone help please..hopefully this makes sense

There are many ways to do it and if you search this site you'll find a lot of info on them..but the easiest by far is to imply set a black brush to color mode and paint everything you want to appear BW.

or

open color image, desaturate it, then paint back the color with the history brush.
