Camera Raw Settings for monochrome?

I'm shooting monochrome images with a Canon Digital Rebel XTI but when I load the images in Bridge or Photoshop CS they are showing up in color rather than black and white. How do I set Camera Raw to show the files properly in B&W?

RAW file format is for colour and has to be converted to black and white. It is just a quick fix in photoshop, if you wish to desaturate the image. Otherwise select the monochrome feature under tools and shoot as a high-res JPEG file. I am not sure of the XT1 but almost all DSRL cameras made by Cannon have relative features.
