Here are two images. One is very life like in color while the other is dull and boring. I would like to get the round logo color to be more like the dollar sign image.

I did a very quick job (it's chaos here! lol) what I did was sample a colour off the gold image and then ajust the logo colours to roughly match, using image/ajustment/colour ballance, if you took some time you'd get it a lot better than this, you really need to sample different points to do it properly, but I just havent the time at the moment. Have you tried using the Curve Adjustment..
Click the middle line and pull toward the top left corner..it will get you started.
