Are there any definition on what "Dither" and "Amount" do somewhere?

You could google it or check photoshop's help. Amount simply changes the strength of the dither.

dither is a very simple concept, justa tad hard to eplain. basically it allows an image to contain less colours. Let's supose we have a gradient that goes smoothly from black to white. it may use a lot of colours, maybe the full 256 shades of gray. You could dither this down as far as 2 colours. now the image can only contain black and white, so the computer will create a sort of pattern of black and white dots which, if done preoperly, will fool the eye and you may not even notice it's dithered. Try it yourself:

make a black-to-white gradient, save it. save it again as a dithered gif with 2 colours. then open this gif and zoom way in. You'll notice quite a difference compared with the non-dithered one.
