I'm looking to convert an image to grayscale, then pixelate that image so that it can be gridded and painted on a canvas. I don't need help with the pixelation, but I was wondering if anyone has some suggestions for the greyscaling. Is there a good way to count and control the number of shades of gray in the image?

Convert to greyscale. File-Save for Web use gif, and set the number of colors you want.
