I would like to create a path with the pen tool; I understand I can also use the paintbrush to define the shape I created. I'm getting the hang of it, but every time I create a curved segment, the inside curve fills in, as if I had used the paint bucket for that area. Is there a way to avoid filling in the area, leaving only the path segment?

Yes. In the Pen Tool's option bar, click on the Paths icon (second one in from far left)
